How To Make a Vegan Plantain Chip Salad

My guilty pleasure is snacking on chips like nobody’s business, especially as the temperatures dip. Crunch is comforting! If you’re an avid chip snacker like me, but wanna keep it cute and healthy this season, this plantain chip salad may do the trick. It’s tasty, fulfilling and most importantly, crunchy. Plus, it only takes like 7 minutes to make. Simple vegan meals for the win!

Combine: (makes 1 salad serving)

  • 1 handful of romaine lettuce

  • 1 handful of spinach leaves

  • 1/2 handful of shredded carrots

  • 1-2 cloves of fresh chopped garlic

  • 2 slices of red onion

  • 1/2 green or red bell pepper

  • 1/2 avocado

  • 1-2 spoonfuls of peperoncini

  • 6 cherry tomatoes

  • 1 small carton of shiitake mushrooms

  • 1/2 handful of dried plantain chips

  • Seasonings: pepper, paprika, no-salt seasoning blend, onion & garlic powder, Italian seasonings (oregano, thyme, basil, rosemary)

  • 2 Tbsp olive oil

  • Primal Kitchen’s vegan caesar dressing

Salad fixings

I love this salad because it satisfies my snack cravings, while also offering tons of vegetables.

Mushrooms:

After sauteing them they may resemble chicken.

To Make:

  • Chop and saute shiitake mushrooms in a pan with olive oil.

  • Add seasonings. I use onion and garlic powder, paprika, a no salt seasoning blend, and Italian seasonings. Saute for about 4 minutes.

  • Chop your romaine and spinach leaves and add to a salad bowl.

  • Pop in carrots, 1 clove of garlic, red onion, red or green bell pepper, avocado, peperoncini, and cherry tomatoes.

  • Add your mushrooms to the top of the salad.

  • Sprinkle plantain chips on top. I break them in half to make them bite sized.

  • Top with additional Italian seasonings and garlic powder (if desired)

  • My dressing of choice: Primal Kitchen’s plant-based caesar dressing.

You can find Primal Kitchen’s plant-based caesar dressing at most local grocery stores, including Sprouts.

By the way, plantain is packed with iron, fiber, and magnesium. Good for eyes, skin, brain and digestion, even in chip form! The seasonings and peppers give it a flavorful kick. Feel free to adjust them as desired for taste.
