How To Make Vegan Dragon Fruit Bark
Want a quick, tasty, no-stress dessert to add to your lineup? Try this colorful, plant-based treat! It’s a pink dragon fruit, yogurt bark delight and only takes a few minutes of prep time. I'm all about giving myself grace these days, and taking more time to enjoy special moments outside of the kitchen.
Dragon Fruit is rich with antioxidants, iron-boosting, and is good for gut health. It’s packed with lots of prebiotics, and may also have the ability to lower your blood sugar, depending on how often you eat it. All good stuff to consider after an action packed meal. More plants please! Especially during the holidays.
Here's how to make pinK dragon fruit bark:
Grab 1 dragon fruit smoothie pack. Pitaya Foods has a good one.
Defrost it.
Get plant-based yogurt. We enjoy the So Delicious vanilla yogurt brand, made out of coconut milk. Use 1 large 24 oz. cup.
Pour the yogurt into a medium sized bowl.
Cut the smoothie pack open. Squeeze it into the bowl with the yogurt. Mix them together.
Line a baking pan with parchment paper.
Pour the mix onto the pan. Gently smooth out the top with a spatula.
Get decorative! Depending on your tastebuds, you can add fruit, nuts, coconut, sprinkles, granola, or dairy-free chocolate as a topping, or simply leave it plain. It will still taste lovely.
Pop the pan into the freezer for a few hours.
Pull the pan out of the freezer. Gently transfer the bark with the parchment paper onto a cutting board.
Cut out squared pieces and enjoy!

Note: This cold treat can be used as an ice cream or popsicle alternative. Best eaten upon serving. Add agave to the blend, if you prefer a sweeter taste.
