6 Vegan Egg Substitutes
$14 for a carton of eggs?! Outrageous. Yep, I saw it at the grocery store and gasped. We all know that eggs have been higher to buy at the store lately, but did you know that the cost has tripled since last year? On average eggs right here in SoCal average $7.30, compared to $2.30 in 2022. Blame it on inflation and that deadly bird flu, eeek–eww!
Want to save money at the grocery store? If you're not ready to sell your first born for a carton? consider these 6 vegan egg alternatives:
Vegan Egg Substitutes: If you’re craving scrambled eggs or an omelet try JUSTEgg or Hodo’s All Day Egg Scramble (my favorite: found at Sprouts). Both liquid based products are super simple to make (literally just pour it on the skillet), and mess free. They produce fluffy and flavorful eggs, after seasoned. Hodo is soy based and JustEgg uses mung beans as their protein source.
Scrambled Tofu: Tofu gets a bad rap, but I truly believe it’s because many of us don’t know how to finesse the texture or seasoning when cooking it. I recently made a delightful tofu scramble that was so tasty, no one could tell me it wasn’t eggz–lol! Make sure to press your tofu before making it to squeeze out all of the water. Continue to squeeze and massage it out of your hands when adding it to a skillet. I seasoned mine with turmeric, garlic, salt, pepper, paprika, and tossed in a little liquid soy aminos and it was delish. You can mix the it with veggies for a scramble. You can also add it as a protein topping to a salad, my new favorite thing to do!
Flax Egg: Flax eggs are super simple to make! Grab 1 tablespoon of flax meal and pair it with 2.5 tablespoons of water. Mix and pop it into the fridge for 15 minutes until the mixture is congealed. I use flax eggs for baking. I also add them to the batter when I make vegan fried chick’n with oyster mushrooms, for that extra crunch, even if the recipe doesn’t call for it. Banana: When using bananas as an egg substitute, it’s all about balancing taste. As per Peta, one ripe mashed banana can make a delightful egg substitute in cakes and pancakes. Add them to the batter, especially when you’re making cakes or pancakes that are compatible with a banana’s sweetness and you’ll be smacking your lips. Yum!
Applesauce: I love adding applesauce to our cornbread! Just like bananas and flax eggs, applesauce is a great binder for sweets and baking. Add 1⁄4 cup of applesauce to replace 1 egg. Keep in mind that applesauce can make food a bit dense and moist with each egg that you replace.
Aquafaba: Aquafaba is somewhat new to the vegan cooking scene, but is quite effective when it comes to making a good bind and even fluffier food. Aquafaba is the liquid that comes after draining canned chickpeas. It’s not only extra nutritious, it’s also very versatile. Unlike other egg substitutes, Bob’s Red Mill shares that Aquafaba “has the ability to bind and create lift.” It works well when making baked goods, including cupcakes, brownies, pancakes, and meringues. Lightly whip three tablespoons of aquafaba to replace one egg.
