Here are 3 popsicle recipes that are simple to follow, have minimal ingredients, are low on sugar, and will keep little hands and minds occupied! My 6-year old and I had a blast making these vegan treats. My 10-year-old enjoyed tasting and sharing them with our family. After tasting all 3 popsicle recipes, we each have a favorite. Here are the deets:
Blueberry Basil Popsicles
For the adventurer-sweet and herbal!
Blueberry/Basil Popsicles:
Ingredients:
~4 cups of fresh blueberries (about 2 pints)
~⅓ cup of fresh chopped basil
~⅓ cup of agave
Made with only 3 ingredients
Blueberries, basil, and agave
Directions:
Pop all ingredients in a blender or food processor. Blend until the mixture is smooth. Add to popsicle molds. Put in the freezer for 4-6 hours and enjoy!
Helping out
By helping out my son worked on his hand/eye coordination and had fun mixing the ingredients up. Simple enough recipe to follow the directions, long enough to keep them engaged, and easy enough to clean-up!

Watermelon Popsicles
For the minimalist-sweet + refreshing
Watermelon Popsicles:
~1 medium-sized watermelon
Directions:
This is a crowd pleaser, and it’s incredibly simple to make. 1 ingredient only! Chop up a medium-sized watermelon. Add to a blender, food processor or juicer. Blend until the mixture is smooth. Once smooth, grab a measuring cup and strainer. Pour the watermelon juice through the strainer and into the measuring cup. Add the juice to the popsicle molds. Put in the freezer for 4-6 hours. Enjoy!

Watermelon is both tasty and incredibly hydrating.

Vegan Creamsicles
Coconut milk + oranges = delightful
Vegan Creamsicles:
~2 medium-sized navel oranges
~1 cup of full-fat coconut milk
~1 teaspoon of orange zest
~⅓ cup of agave or pure maple syrup
~2 teaspoons of pure vanilla extract
Directions:
Wash oranges. Use a zesting tool to harvest 1 teaspoon of orange zest from the oranges. Peel and cut oranges into quarters. Add all ingredients to a blender, except for the zest. Blend for about 20 seconds, until smooth. Add in the zest. Pulse for a few seconds. Pour the creamsicle mixture into your popsicle molds. Makes about 6. Freeze for 4-6 hours. Yum!
