HOW TO MAKE NICE CREAM
Did anyone else have a big ‘ole inauguration party at home, all by themselves?
We did! My daughter’s big dream is to be president. And today, with her little brother at her side, they saw hope on stage. As Madam Vice President was sworn in, they witnessed history being made, and saw proof that achieving her childhood dream one day is possible.
We celebrated by making Nice Cream! A sweet snack, that still keeps everyone on team healthy.
As a newish vegan, I’d heard about the dairy-free alternative a lot before I tried it. I can get easily overwhelmed in the kitchen, so I kinda breezed over the idea for a while because it sounded a little too complex. I was wrong. It’s actually super simple to make!
I used just 5 ingredients to make our Nice Cream base:
Bananas
Vanilla Extract
Milk (non-dairy if you like)
A spice or additional fruit
Here’s how to make 4 servings:
Slice 2 bananas in circles. Lay them on a parchment paper lined tray.
Freeze them.
Once done, add the frozen bananas to a blender. Blend until smooth.
Add 1 tablespoon of milk at a time, until peak creaminess is achieved.
Add 2 teaspoons of vanilla extract.
Throw in your desired spices, fruit and add-ins, depending on your flavor of choice.
Details:
For vanilla, our spice of choice was cinnamon. We mixed it with the vanilla extract, to kick it up.
For strawberry, we added fresh strawberries and shredded coconut with the banana, vanilla extract and milk.
